Bake the aubergines in a medium oven at 320°F for 45 minutes. Peel off the skin and squeeze off any excess juice. Place in a food processor and blend with half the lemon juice and the onions. Add one tablespoon of oil. With the blender running, add the rest of the oil, the salt, and the remaining lemon juice. |
